Cajun Alfredo Pasta

Ingredients

  • 16 ounces rigatoni pasta
  • 1 tablespoon olive oil
  • 10 slices bacon chopped
  • 1 cup white wine or chicken stock
  • 1 pint heavy cream
  • 4 ounces cream cheese
  • 1/4 cup Cajun spice
  • 1 cup shredded Parmesan cheese
  • 5 cloves garlic minced
  • 2 bunches broccoli cut in small pieces
  • 4 ounces fresh spinach

Instructions

  • Start by cooking your rigatoni pasta as directed on the back of the box. Once cooked you will drain and toss with the olive oil. Set it aside.
  • Now you want to take your raw chopped bacon and cook it on medium heat in a large skillet on the stove. You will cook until the bacon is starting to get crispy. Remove bacon and place on a paper towel lined plate to drain grease off bacon. Then remove bacon grease from the skillet.
  • Now you will add in your white wine and use a spoon to deglaze the bottom of the pan. Once the pan is clean you move on to the next level.
  • Add in your cream cheese, heavy cream, and stir until it is melted.
  • Mix in your Cajun seasoning, cheese, and garlic.
  • Stir in your broccoli and cover and cook for 5-6 minutes or until your broccoli is tender.
  • Once broccoli is tender toss in your spinach leaves, stir and cook for 1-2 more minutes. Once spinach is wilted you can toss in the cooked pasta, and serve the cajun alfredo pasta.
