Ingredients

  • 1 4-5 oz can of salad shrimp
  • 1 can drained chickpeas
  • 1 fresh tomato diced
  • 1 medium-large avocado diced
  • 1/4 cup white onion chopped (can use red onion too)

Dressing Ingredients

  • 1/8 cup olive oil
  • 1/8 cup . red wine vinegar
  • 1/4 tablespoons garlic powder
  • salt and pepper taste

Instructions

  • Prep your vegetables and place them in a bowl. You want to cut into bite size pieces for the salad.
  • Next you will add all the ingredients for the homemade dressing in a mason jar or bowl. Shake or whisk until fully combined.
  • Pour over the vegetables. Drain and rinse chickpeas and toss in the salad and serve it up.

Notes

Chickpeas - You can skip the chickpeas or even skip the dressing and do salt and pepper. Either way, it is fantastic.
Shrimp - Canned shrimp, or pre-cooked shrimp of choice works. Just make sure it is cold shrimp that is fully cooked.
