Ingredients

  • 8 ounces dry spaghetti
  • 1 pound ground beef
  • 3 cups heirloom cherry tomatoes
  • 1 small white onion
  • 10 sprigs parsley or 2 tablespoons dry parsley
  • ½ teaspoon salt
  • 4 cups vegetable broth
  • 1 cup Mozzarella
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • Red pepper optional to taste

Instructions

  •  Brown ground beef together with onion in Instant Pot inner pot on saute mode.
  •  
  • Add in the cherry tomatoes, parsley, dry spaghetti, and vegetable broth. Press pasta down so it is under the liquid. Add a little extra liquid (water) to cover the pasta if necessary. You can drain excess liquid when the pasta has finished cooking if desired.

  • Close the instant pot lid and turn pressure valve to seal. Cook on manual high pressure for 6 minutes.

  • Allow for a quick pressure release (drain liquid if desired) and then add in the remaining ingredients, stirring in the cheese.
