Shrimp Scampi Pasta

Ingredients

  • 1 lb cooked shrimp peeled
  • 2 tbsp. olive oil
  • 1/2 tsp. red pepper flakes
  • 1/4 tsp. salt
  • 4 tbsp. minced garlic
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup chicken stock
  • 1/4 cup white cooking wine
  • 5 tbsp. lime juice freshly squeezed 3 tbsp. for shrimp marinade
  • 4 oz pasta linguine
  • fresh cilantro garnish

Instructions

  •  Start out by taking a large bowl and adding in your shrimp, lime juice, red pepper flakes, salt, garlic, and olive oil. Toss evenly, and cover and refrigerate for 2 hours to marinade.

  • Next, break your pasta so it fits in the Instant Pot, and pour 3 cups of water over the top, with 1 tsp of salt.

  • Set pressure cooker to high pressure and cook for 5 minutes.
  •  
  • Do a quick release, add in your shrimp, cilantro, chicken stock, and 2 tablespoons lime juice along with white wine. Mix well, and add more salt if needed.
  •  
  • Top with the leftover cilantro, red pepper flakes, and grated lime zest for color.
