Cornflake Cookies

Cornflake Cookies are a peanut butter crunchy cookie that is made right in the Instant Pot. You can ake these no bake peanut butter cornflake cookies on the stovetop as well.

Ingredients

  • 6 cups plain cornflakes not frosted
  • 1 cup granulated sugar
  • 1 cup corn syrup light
  • 1 cup creamy peanut butter
  • 1/2 teaspoon vanilla
  • 1 cup milk chocolate chips (optional

Instructions

  • Turn your Instant Pot to saute, or your stovetop to medium heat. Pour in your corn syrup, peanut butter, and granulated sugar.
  • With a spoon, you want to constantly stir, so that the mixture does not burn. You will want to mix this up until the peanut butter mixture begins to boil.
  • Once it boils, remove from heat. I just took my pot liner out and sat on the heating pad.
  • Quickly stir in vanilla followed by the cornflakes. Gently stir in your mixture until well combined.
  • Once you are done take two spoons and scoop and drop pieces of the cookie!
  • Then allow cookies to cool a bit. You can serve as is, melt chocolate chips to drizzle over the top, or even sprinkles.
  • These cornflake cookies are so easy to make and highly addictive.

Stovetop Directions

  • Add all the ingredients but the cornflakes into a pot on the stove on medium heat.
  • Cook and stir often until the mixture begins to boil. Once it is boiling remove from heat.
  • Stir in the cornflakes, and then begin scooping the cookies onto wax paper or a parchment paper lined tray.
  • Once the cookies are set up, serve and enjoy.
  • If you want you can melt chocolate and drizzle on top of the cookies as well.
