Ingredients

  • 4 cups Cheese Tortellini
  • ½ cup Mayonnaise
  • ½ cup Italian Dressing
  • 1 tablespoon grated Parmesan Cheese more for topping
  • 1 tablespoon chopped Parsley fresh
  • ½ teaspoon Black Pepper
  • Half of a Cucumber sliced
  • Half of a Red Onion finely chopped
  • Half of a Green Bell Pepper finely chopped
  • Half of an Orange or Red Bell Pepper finely chopped
  • 1 cup Cherry Tomatoes halved

Instructions

  • Start by prepping all your vegetables by washing and drying. Then chop up all the veggies as directed. Cucumbers, cherry tomatoes, onion, peppers.
  • Start cooking your fresh cheese-filled tortellini pasta as directed on the back of the box or bag you bought. Once done, drain, and run cold water over the pasta to help cool it down.
  • Now in a bowl, you will mix your mayonnaise, Italian dressing, parmesan, and pepper together. Whisk until nice and creamy.
  • Toss your cooled off pasta, fresh diced vegetables, and homemade sauce in a bowl. Give a toss until combined.
  • Store your pasta salad in the fridge for up to 2 hours before serving. This is going to help blend flavors.
  • Then when you tortellini pasta salad is done refrigerating, pull out, and serve.
  • You can top with additional parmesan and parsley if you would like.
