Serve up this elote corn on the cob for a delicious and easy side dish, snack or appetizer. Corn on the cob that is topped with a creamy sauce of Mexican crema and mayonnaise, a sprinkle of Tajin, and Cotija cheese and lime. A must make sweet corn recipe.

Bring a pot with water to a full boil. Add the corn and cook for 5 minutes or until the corn kernels are tender.
Remove corn from the hot water and place on a plate.
In a bowl you will add the Mexican crema, mayonnaise and lime juice. Mix well.
Brush the warm corn with the Mexican crema mixture. Then sprinkle on the Cotija cheese, Tajin, and fresh cilantro.
Serve immedietaly.
Notes
Corn - Reach for fresh and plump corn on the cob for this recipe. Fresh corn is best. Cotija Cheese - If you can't find cotija cheese you can easily swap it with feta cheese if need be. Cilantro - Optional topper. If you are not a fan of cilantro feel free to swap with parsley. Tajin - Add a little or a lot depending on your flavor preference.
