Elote Recipe (Mexican Street Corn)

Serve up this elote corn on the cob for a delicious and easy side dish, snack or appetizer. Corn on the cob that is topped with a creamy sauce of Mexican crema and mayonnaise, a sprinkle of Tajin, and Cotija cheese and lime. A must make sweet corn recipe.

Equipment

Ingredients

  • 4 corns on the cob husk removed
  • ½ cup cotija cheese
  • 1/3 cup Mexican crema
  • 1/3 cup mayonnaise
  • 1 lime juiced
  • 2 tablespoons cilantro chopped
  • 1 teaspoon tajin seasoning

Instructions

  • Bring a pot with water to a full boil. Add the corn and cook for 5 minutes or until the corn kernels are tender.
  • Remove corn from the hot water and place on a plate.
  • In a bowl you will add the Mexican crema, mayonnaise and lime juice. Mix well.
  • Brush the warm corn with the Mexican crema mixture. Then sprinkle on the Cotija cheese, Tajin, and fresh cilantro.
  • Serve immedietaly.

Notes

Corn - Reach for fresh and plump corn on the cob for this recipe. Fresh corn is best. 
Cotija Cheese - If you can't find cotija cheese you can easily swap it with feta cheese if need be. 
Cilantro - Optional topper. If you are not a fan of cilantro feel free to swap with parsley. 
Tajin - Add a little or a lot depending on your flavor preference.
