Buffalo Chicken Pasta

Buffalo Chicken Pasta is an easy dinner idea that you can make any night of the week. This is a diced chicken, cream cheese, buffalo hot sauce, shredded cheese, and more. This creamy chicken dinner is so easy and carries a punch of heat.

Ingredients

  • 3 cups Pasta uncooked
  • 1 1/2 Tablespoons Olive Oil
  • 3 cups Chicken chopped
  • Salt and Pepper to taste
  • 1 Tablespoon Ranch Seasoning
  • 4-8 ounce Cream Cheese softened (as desired)
  • 1 cup Sour Cream
  • 1/2 cup Milk as desired (optional)
  • 1-2 cups Chicken Broth as needed
  • 1/4 cup Buffalo-style Hot Sauce
  • 1/2 cup Blue Cheese divided
  • 1 cup Cheddar Cheese
  • 1 Green Onion sliced thin

Instructions

  • Cook your pasta as directed on the package. Drain but do not rinse in cold water.
  • Then in a large skillet heat oil over medium heat.
  • Season the diced chicken with salt, pepper, and ranch seasoning.
  • When the oil is hot, add in the chicken and cook for 6-8 minutes or until the diced chicken is fully cooked.
  • Remove the chicken and place on a clean plate.
  • Then in the same skillet add your chicken broth, and bring to a simmer. Then stir in the sour cream and cream cheese. Mix until the cream cheese is fully melted.
  • Next add in the buffalo sauce, and milk. Then add in most of the shredded cheese. Reserve some for topping. Mix until cheese is melted.
  • Add in diced cooked chicken and pasta. Stir to coat.
  • Top with remaining cheese and green onions. Then serve and enjoy this buffalo chicken pasta dish.

Notes

Chicken - You can use pre-cooked chicken if you want. Just season with the ranch and salt and pepper. 
Pasta - Now you can use any medium size pasta for this chicken dinner. 
Bake - Want to finish this dish off in the oven? Top with cheese and then bake in the oven at 400 degrees until the cheese is melted.
