Cake Mix Thumbprint Cookies

Cake Mix Thumbprint Cookies is a quick and easy thumbprint cookie recipe. I used a lemon cake mix and a raspberry jam for the filling. Learn how to make easy thumbprint cookies with 5 ingredients.

Ingredients

  • 1 15.25 ounce Box Cake Mix I used lemon cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/3 cup granulated sugar
  • 1/2 cup raspberry jam

Instructions

  • Preheat the oven to 350 degrees F. Then grease your cookie sheet, line with parchment or use a silicone baking mat.
  • In a bowl add your cake mix, egg, and oil to a bowl. Mix with a whisk or a hand mixer until a dough forms.
  • Add your granulated sugar to a plate.
  • Use a cookie scoop and roll your cookie dough into balls and then roll into the sugar and place on the cookie sheet. Leave space between each cookie.
  • Bake your cookies for 10-12 minutes, or until the cookies are fully cooked.
  • Remove the cookies from the oven, and then use the cookie scoop to press in the center of the cookies. I just use the back side of the spoon.
  • Once the cookies are cooled completely, you will add some of your raspberry jam in the center of the cookies.

Notes

Cake Mix - You can use any flavor of cake mix you want. 
Filling - Caramel, peanut butter, nutella, jam, preserves, etc. Depending on flavor of cake mix will depend what type of filling you want. 
Storing - Refrigerate or freeze your cookies. 
Cookies - This recipe makes around 20 cookies, depending on the size of cookies.
