Chickpeas, crumbled feta, Kalamata olives, roasted red peppers, cucumbers and more give this chickpea salad its stand out flavor. I make a homemade red wine vinegar dressing that brings out so much flavor in the colorful vegetables. Give this Mediterranean salad a try.
Drain and rinse your chickpeas and place them in a large bowl.
Then you will drain your olives and dice them up as well, repeat same steps with red peppers by draining and slicing.
Next you will dice up the tomato, onion, and cucumbers. Pour into the bowl, and add a portion of the feta cheese if you want.
For the dressing add the oil, vinegar, lemon juice, fresh dill, salt, pepper, and garlic powder into a bowl. Whisk until fully combined and then pour over the salad.
Toss the chickpea salad well and taste. If you need add more salt to bring out more flavor. You can also add 1/2 tablespoon vinegar to help add more bite to the salad if you want.
Cover the Mediterranean chickpea salad and refrigerate until you are ready to serve. Right before serving add more feta cheese and enjoy.
Notes
Chickpeas - You can do 1 can chickpeas and 1 can black beans for a twist in flavor. Olives - The olives are optional and you can always swap with black olives that are drained and diced up as well. Feta Cheese - So the feta cheese adds a nice tangy component, but you can disregard if you want. Or swap with a mozzarella or even a goat cheese if you want. Stir Before Serving - Make sure to stir the salad before you serve, as the dressing will sink to the bottom of the bowl. Mixing real quick ensures all ingredients are incorporated.
