Simply slice the steak into thin strips and brown in a little canola oil on a skillet. While that is browning I slice up my onions into thin strips and set aside.
Once my steak is browned, I toss it along with my onions in my slow cooker. Add in the broth, soy sauce, garlic, and ginger and turn on low and let cook for 6-8 hours.
About 30 minutes before I am ready to serve I will slice up my peppers and toss in. Then in a bowl, I add cold water and cornstarch to make a slurry that I stir into the mixture. This will help thicken up the sauce.
Cook up your rice, mashed potatoes if you want to pair your pepper steak with it, and serve and enjoy.
