Slow Cooker Pepper Steak

Tender and juicy steak, slices of peppers and onions throughout served over a bed of rice. A comforting and hearty weeknight dinner recipe.

Ingredients

  • 1 - 1 1/2 pounds of beef steak any steak cut works
  • 1 teaspoon oil
  • 1 medium yellow onion
  • 1 clove garlic minced
  • 1/2 cup water
  • 3 tablespoons cornstarch
  • 2 green bell peppers sliced
  • 1 1/2 cups beef broth
  • 1/4 teaspoon ginger powder or can use fresh
  • 3 tablespoons soy sauce
  • salt and pepper to taste

Instructions

  • Simply slice the steak into thin strips and brown in a little canola oil on a skillet. While that is browning I slice up my onions into thin strips and set aside.
  • Once my steak is browned, I toss it along with my onions in my slow cooker. Add in the broth, soy sauce, garlic, and ginger and turn on low and let cook for 6-8 hours.
  • About 30 minutes before I am ready to serve I will slice up my peppers and toss in. Then in a bowl, I add cold water and cornstarch to make a slurry that I stir into the mixture. This will help thicken up the sauce.
  • Cook up your rice, mashed potatoes if you want to pair your pepper steak with it, and serve and enjoy.
