Ingredients for Puff Pastry

  • 10 tablespoons cold unsalted butter
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup ice water

Instructions

  • In a bowl add your flour and salt. Mix well to incorporate.
  • Then you will use a grater to shred the cold butter, or dice it very thinly. This is important.
  • With a pastry cutter fold the cold butter into the flour mixture working it in.
  • Add the ice water, and mix until combined.
  • Place the dough on a floured surface, and work the dough quickly to incorporate it.
  • Fold the puff pastry dough into 3-4 times, and then use right away or freeze until you are ready to use.

Notes

Make sure to use butter and not margarine in this recipe.
You need to work quickly with this dough. The dough needs to stay cold, if it warms up, it messes up the texture of the pastry dough.
Don't overwork the dough or it will make it tough.
Wrap well in plastic wrap, and then place in a freezer bag. You can freeze the dough for 3-4 months.
Thaw dough for just a short bit on the counter then use for any recipe you would like.
Use unsalted butter for this recipe. If you use salted butter, omit the salt in the recipe.
Ensure you don't add too much flour or it will dry out the pastry dough and give you the wrong texture.
